Store in refrigerator, best in crisper drawer. Make sure mixed bell peppers are dry before you place them into the refrigerator.

INGREDIENTS

• 2 eggs
• 2 tablespoons of olive oil
• 1 onion, diced
• Pinch of salt
• Tri-color bell peppers, diced

INSTRUCTIONS

• In a medium bowl, whisk the eggs. Set aside.
• Heat olive oil in a pan. When the pan is hot, ad onions and sauté till partially translucent. 
Next, add diced peppers, salt to taste and mix.
• Add whisked eggs around the pan and reduce the heat.
