Fresh Sea Urchin

Sea urchins are round but covered by spines for protection, which also helps them to move around accompanying their tube feet. Their primary food is algae and by eating that, they can grow around 3-10 centimetres and live up to 200 years!

In Mediterranean cuisine, they are eaten raw and with lemon. Italians also use them for pasta sauces and they call it ricci. It is also used to flavour omelettes, scrambled eggs and fish soups.
