Ingredients

For Grilled Lobster

  • 2 lobster
  • 1 carrot
  • 1 onion
  • 1 celery
  • 2 sprigs of thyme
  • 1 bunch of fresh parsley
  • 2 bay leaves

For Flavored Butter

  • 250g of butter, at room temperature
  • 1 tbsp. of root ginger, peeled
  • 1 lime, juiced
  • 2 garlic cloves
  • 1 red chilli
  • 1 bunch of coriander
  • salt
  • pepper

Start with flavoured butter first. Grate the ginger and garlic into the butter in a mixing bowl. Add lime juice to the mixture and mix. Add your finely chopped peppers and chopped coriander leaves with their stems. Flavour with salt and pepper. Put the butter mixture you prepared on the cling film and wrap it tightly in a cylinder. (Note that this mix can be kept in the refrigerator for up to 1 week!)

Put the lobster in the freezer to desensitize them. Fill a large pot with water where the lobsters can fit completely. Add salt and let it boil. After the water boils, add the chopped carrot, celery and onion to the pot along with the herbs. Let it boil for 5 minutes and let the flavors blend.

Place their claws against their backs, noting that the lobster’s claws are tied. Holdover their heads. Remember that your knife must be sharp at this stage. Place your knife on the lobster’s head under its mouth. Align the blade with the lobster’s midline. Place the blade side facing its tail. Pierce the lobster’s head down. Place the tip of the blade on the full body side where the tail meets the rib cage. Cut the middle line. Hold lobsters by their backs and tuck their tails under. Lobsters are ready to cook now.

Put the lobster cuts into a pot and let them boil for 1 minute. Do not forget to close the lid. After 1 minute, turn off the heat and leave the lobsters in the pot for 5 minutes.

Slice the lobsters lengthwise. Scrape off the entrails and sticky flesh. Reserve the juices to add the lobsters later. Avoid rinsing the lobsters with water to preserve their flavour. Disjoint the claws and break off the end joints. Take care to remove the meat into large pieces as possible. You can use lobster-pick for this. After placing the lobsters you prepared on the baking tray, divide the meat you have separated between the heads and pour the juice evenly over the lobsters.

Bake by grilling on the highest setting in a 200°C preheated oven. Slice the butter you prepared and add it to the lobsters. Place in the oven for 5 minutes, then on the hot grill until golden brown. Grilled lobsters are ready to serve. Enjoy!
