Ingredients
- 200 gr of Raw Almonds
- 3 Eggs
- 125 gr Butter
- 350 gr of Flour
- 170 gr of Granulated Sugar
- Zest of 1 Lemon
- 1 tbsp Vanilla extract
- 5 gr Baking powder
Recipe
- Preheat the oven to 135°C.
- Spread the almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant. After they cool to room temperature, grind the almonds.
- Raise oven temperature to 180°C.
- Mix butter, sugar, eggs and vanilla in a bowl.
- Add almonds, flour, baking powder and lemon zest and start kneading.
- When the cookie dough is ready, scoop 1.5 tbsp size cookies and place them on the baking tray.
- Bake for 20 minutes, until lightly golden brown. Enjoy!
