  • 1 tablespoon olive oil
  • garlic cloves minced
  • 1 medium onion diced
  • carrots peeled and diced
  • zucchini diced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes
  • ¼ cup tomato paste
  • 1 kg tomatoes crushed
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper plus more to taste
  • Optional: parsley and basil chopped

Instructions

  1. Heat olive oil in large Dutch oven over medium heat. Add garlic, onion, carrots, and zucchini and sauté until tender, 5 to 6 minutes.
 Add the Italian seasoning and crushed red pepper flakes and cook for an additional 30 seconds.
 Stir in tomato paste and cook ~1 minute.
  2. Add the crushed tomatoes and stir to blend. Reduce the heat to low, cover, and simmer for 30-60 minutes.
  3. Remove from the heat. Season with salt and pepper.
  4. Optional: Put all ingredients in blender and process till smooth.
 Serve with parsley and basil.
